Handcrafted with Tradition:

XILA is a labor of love, produced in small batches by Edilberto Bautista and his wife at their Palenque in Oaxaca. This artisanal mezcal is crafted using traditional methods like the horse-drawn tahona and conical oven, ensuring exceptional quality and flavor.

7 Times 7 - The XILA Ritual:

XILA's unique flavor profile is achieved through a meticulous process:

• 7 Years Grown: Our agave Espadín matures for 7 years before harvesting and double distillation.
• 7 Days Infused: The 7 botanical notes are carefully macerated in the mezcal for 7 days.
• 7 Days Rested: A homemade simple syrup and water are added, then the mixture rests for another 7 days.
• 7 Times Filtered: The final liqueur is filtered through cheesecloth 7 times before bottling and labeling by hand.
