Vermut Aire, Spain (17%, 75cl)

Vermut Aire is a daring reimagining of the vermouth tradition, born from the creative vision of Pàkaru and the oenological expertise of Àlquia Creacions Enològiques SL at the Rovira i Virgili University of Tarragona. Produced in limited batches of just 1,200 bottles, it begins with a base of high-quality Muscat wine, naturally sweetened with concentrated grape must, and patiently macerated with 34 carefully selected herbs, spices, and botanicals. This is vermouth elevated to an aromatic art form.

Its character unfolds in waves: elderberry, orange, and hibiscus flowers meet the tropical vibrancy of mango, pineapple, strawberry, and raspberry, creating a lush and exotic bouquet. At its core lies wormwood, supported by a symphony of flavours both classic and audacious—liquorice, basil, cardamom, ginger, and cinnamon—all in bold contrast to conventional vermouth profiles. The result is a sensual, floral-fruity expression with a tropical soul, offering a new way to savour the timeless pleasure of vermouth.
