Based on their "waste not, want not" principle and focusing on circularity, they produce the base alcohol for the gin on-site from surplus wine and lees from wine production.

First, they steep European juniper berries overnight in their base alcohol - then distill with their blend of botanicals, including chamomile, orris, angelica, and fresh and dried citrus. After that, dilute to 46% ABV with distilled water.
