Silvio Carta Servito Vermouth di Sardegna Rosso is an artisanal Italian fortified wine produced by the Silvio Carta distillery in Zeddiani, near Oristano on the western coast of Sardinia, Italy. Crafted from a base of indigenous Sardinian white wine, Vernaccia di Oristano DOC, this expression is fortified and infused with wild local botanicals sourced directly from the surrounding Mediterranean shrubland, or macchia mediterranea.
The production process centers around an extensive 12 year barrel aging regimen for its base wine. The underlying Vernaccia di Oristano is matured for a full 12 years in traditional Sardinian chestnut casks, developing rich oxidative complexity, amber hues, and deep nutty notes prior to aromatization. Following this 12 year aging period, the wine is infused with wild harvested Sardinian botanicals, most notably local sea wormwood (Artemisia), helichrysum (elicriso), wild thyme, rosemary, myrtle, and pine resin. Naturally sweetened and brought to a strength of 18% ABV, it is bottled without artificial coloring or synthetic flavor additives.
The profile is complex, bittersweet, and intensely aromatic with distinct Mediterranean herb and resinous wood character. The nose opens with aromas of dried fig, warm chestnut wood, pine needle, wild thyme, and toasted orange peel, accompanied by underlying hints of dark caramel and dried chamomile. On the palate, the mouthfeel is rich, velvety, and well balanced, delivering savory flavors of bitter wormwood, medicinal herbs, dried prune, salted licorice, and myrtle berry, offset by a pleasant vinous acidity. The finish is long, warm, and elegant, leaving lingering trails of bitter orange zest, herbal resin, and soft oak tannin.
