Signal Hill Whisky, Canada (40%, 70cl)

Signal Hill Whisky is a masterfully crafted Canadian whisky, blending corn and malt whisky for a complex and refined character. The corn whisky is distilled in a double column still, while the malt whisky is crafted using a traditional pot still. Once distilled, these two whisky styles are carefully blended and matured for 3-5 years in three distinct cask types: new American white oak, first-fill ex-bourbon barrels, and Canadian whisky casks, resulting in a beautifully layered flavor profile. 

With a rich amber hue, Signal Hill Whisky offers a perfectly balanced aroma, combining delicate hints of raisins and dried plums with sweet cream sherry, English toffee, vanilla, honey, soft oak, and a touch of spice. On the palate, the whisky starts with a gentle sweetness, followed by bittersweet cocoa, subtle notes of leather and pipe tobacco, and a mid-palate filled with raisins and dried plums. The finish reveals cream sherry, tea, molasses, and mild oak, delivering a lingering and satisfying depth.
