From one of the newest distilleries in the carribean (2018), Distillery de Port-au-Prince, is the collaboration between La Maison & Velier and the Barbancourt-Linge family. You can only expect top quality with that kind of collab. The Clairin legend,Michel Sajous, has selected the sugar canes, which are of the Cristalline variety, famously known for their aromatic properties.
The cane juice is boiled to a syrup and later mixed with dunder from earlier runs before it ferments.
The final product is a highly sipable 56% white rum, that will make you rethink the whole category.
