The inspiration for this small-batch expression stems from historical aquavit recipes preserved by Danish monasteries, highlighting an old-world tradition of utilizing wild nature for medicinal and aromatic elixirs.

The production process focuses on a careful, organic distillation using classic and local botanicals. Alongside a traditional backbone of caraway (kommen), the distillate is infused with fresh mint (mynte), lemon thyme (citrontimian), chamomile flower (kamilleblomst), and organic malt syrup (maltsirup), before being sweetened with a delicate touch of local honey (honning). It is proofed down to a precise 41.5% ABV using local water, yielding a clear spirit that balances medicinal heritage with modern distilling clarity.

The official profile relies on a beautifully integrated herbal freshness. The nose is highly aromatic and clean, opening with the unmistakable spice of caraway, closely followed by bright, cooling mint and a gentle twist of herbal citrus.
