Mil Pesetas Amontillado is a dry sherry from Sanlucar de Barrameda in southern Spain. The wine is made from the Palomino grape, and before it is bottled, it undergoes two different types of aging: first under a layer of yeast called flor and then without flor, in contact with the air where fine aromas of nuts and dried fruit develop in the wine . The double aging gives the amontillado its very special character.
