La Sapata Băbească Neagră is an organic red wine produced by Crama Delta Dunării in the Dobrogea region of Romania. Located near the Danube Delta, the winery operates under an ecological philosophy that prioritizes indigenous grape varieties and natural biodiversity. This expression is crafted entirely from Băbească Neagră, an ancient Romanian variety known for producing light-bodied, fruit-forward red wines.

The production relies on grapes grown in vineyards that benefit from the maritime climate and sandy, mineral-rich soils of the delta. The vines are managed using certified organic farming practices without synthetic pesticides or fertilizers. Fermentation is carried out with native yeasts in stainless steel tanks under temperature control to preserve the fresh, primary fruit characteristics of the grape, followed by minimal aging to maintain a vibrant profile.

The profile is defined by an aromatic nose of sour cherry, red currant, and a touch of wild violet. On the palate, it displays a light and refreshing texture with notes of cranberry, pomegranate, and a delicate hint of white pepper. The structure is characterized by high acidity and soft, unobtrusive tannins, leading into a clean finish with a lingering berry freshness and a subtle stony mineral trail.

La Sapata is well regarded for reviving traditional varieties and introducing the unique terroir of the Danube Delta to an international audience. The Băbească Neagră is particularly valued as an alternative to heavier, oak-driven red wines, offering a profile that shares stylistic similarities with Pinot Noir or Gamay. The release is an essential selection for pairing with light poultry dishes, grilled vegetables, or for serving slightly chilled as an aperitif.
