La Sapata Aligoté is an organic white wine produced by Crama Delta Dunării in the Dobrogea region of Romania. Situated close to the Danube Delta, the winery operates with a commitment to ecological balance and manual intervention. While Aligoté is traditionally associated with Burgundy, it has found a unique second home in the continental climate and sandy, loess soils of eastern Romania, where it thrives with remarkable character.

The production utilizes grapes harvested entirely by hand from certified organic vineyards. The maritime breezes from the nearby Black Sea help keep the vines healthy without the need for chemical treatments. Fermentation takes place using indigenous yeasts in temperature-controlled stainless steel vats, avoiding any oak contact to preserve the naturally sharp and energetic profile of the variety.

The profile is defined by a crisp nose of green apple, lemon blossom, and fresh hay. On the palate, it displays a lean and taut texture with distinct notes of grapefruit, lime juice, and a touch of raw almond. The structure is defined by a striking, vibrant acidity that drives into a linear finish characterized by a salty, sea-spray mineral quality.

La Sapata is well regarded for showing that Aligoté can produce deeply expressive, single-varietal wines outside of France. Its bracing freshness makes it an excellent choice for those who appreciate clean, high-acid white wines like Chablis or Picpoul.
