Espores Del Gaia Bombolles Pet-Nat is a limited production ancestral method sparkling wine born from a collaboration between Danish winemaker Cecilie Weisberg and Jorge Rovira of Espores de Gaia in Catalonia, Spain. Crafted under strict minimal intervention guidelines, this micro-project focuses on raw purity, regenerative farming, and true low-intervention winemaking.
The production centers on hand-harvested grapes taken from bush-trained Gobelet vines over fifty years old. Grown on dry-farmed stone terraces in Catalonia, the 50+ year old vine Xarel-lo fruit carries incredible concentration and natural acidity. Fermentation occurs naturally, finishing inside the bottle via the ancestral method. The wine is left un-stabilized and unfiltered, with only minimal sulfites added when needed depending on vintage conditions. Each bottle is hand-disgorged and presented under custom label artwork designed by Sara Nanna, with playful variations in glass bottle color used to complement the visual design.
The profile is vibrant, dry, and pure, carrying the raw, expressive heart of old vine Xarel-lo from the Mediterranean coast. The nose opens with clean top notes of crisp green apple, white peach, raw almonds, and fresh sourdough yeast, followed by subtle mineral and herbal undertones. On the palate, the fine natural effervescence delivers a crisp, palate-cleansing texture filled with tart citrus peel, juicy pear, and a touch of saline sea spray. The finish is bone dry, lively, and wonderfully refreshing, leaving lingering trails of orchard fruit, chalky minerality, and clean acidity.
