El Bagazo Blanco Único is an unaged, high-proof expression that represents the most vibrant, ester-forward bottling from Esteban Morales' groundbreaking distillery in Mascota, Jalisco. Born in the Sierra Occidental mountains, this release embodies the producer's closed-loop sustainability cycle, turning agave bagazo into biomass energy while highlighting precision fermentation techniques.
Unlike the core Blanco, Blanco Único utilizes inoculated yeast during its fermentation in 1,500 liter plastic vats to cultivate a distinctively fruit-driven aromatic profile. Harvested from 100% Agave Tequilana Weber, the agave is cooked in masonry pits using bagazo briquettes, crushed with a tahona stone mill, and double-distilled through stainless steel and copper alembic stills. Bottled at a high strength of 49% ABV, it yields a luxurious, full-bodied appearance in the glass.
The profile is bold, velvety, and packed with vibrant fruit esters. The nose is strikingly aromatic, bursting with high-toned fresh fruits, ripe cherries, sweet florals, and a lively ester character. On the palate, a lush, velvety texture coats the mouth with flavors of wild berries and a fresh oceanic mineral lift. The finish is long, crisp, and energetic, characterized by a bright, fresh acidity.
