El Bagazo Tequila Blanco is an innovative artisanal spirit masterminded by Esteban Morales in Mascota, establishing the very first tequila project in the mountainous Sierra Occidental region of Jalisco. Embracing a fully circular production philosophy, the distillery reuses residual agave fibers—known as bagazo—by compressing them into biomass briquettes to fuel both agave cooking and distillation, while utilizing recycled glass bottles, recycled agave paper labels, and local bagazo stoppers.

The production relies on 100% Agave Tequilana Weber processed via stone tahona milling. The agave is cooked using a dual approach of direct heat over volcanic stones and steam in a stone masonry pit, both powered by bagazo briquettes. Natural fermentation occurs in 1,500 liter food-grade plastic tanks. Distillation is executed in two stages: a first pass in a 3,000 liter stainless steel still equipped with internal copper filters, followed by a second pass in a 500 liter copper alembic still. Bottled at 42% ABV, the spirit maintains a medium-bodied structure.

The profile is vibrant, herbal, and mineral-driven. The nose opens with rich aromas of cooked agave, ripe fruits, fresh green herbs, and a distinct mineral character. On the palate, crisp herbs combine with rich cooked agave and mid-palate notes of sweet potato, accented by a slight astringency. The finish is clean, fresh, and delightfully balanced
