Campanilla Destilado de Agave Maguey Verde, Chino, Cuerno y Blanco is a traditional ancestral agave spirit produced in El Palmar, San Luis Potosí, Mexico, by master distiller Maria de la Luz. Crafted using historical clay pot distillation techniques, this expression highlights a field blend of four distinct regional agaves: Maguey Verde (Agave salmiana), Chino (Agave cupreata), Cuerno (Agave americana), and Blanco (Agave americana var. oaxacensis).
The production process relies on ancestral methods passed down through generations. The mature wild and semi wild agave plants are harvested, trimmed, and cooked in a subterranean stone pit oven using local firewood. After cooking, the agaves are crushed manually to extract the fermentable juices. Natural fermentation occurs spontaneously in open vats using wild airborne yeasts. The fermented liquid and agave fibers are then double distilled in small, traditional clay pot stills (campanilla), which lend the spirit its characteristic mineral depth and distinct texture. Bottled at a strength of 50% ABV, it is presented in a 70cl bottle, unaged and free from additives or filtration.
