Dassai 39 Junmai Daiginjo, Sake, Japan (15%, 72cl)

With a polishing ratio of 39%, Dassai 39 saké is the second highest quality of the range after Dassai 23. Sweet and mellowed, it opens to a beautiful and fresh finish. Junmai classification also means that no brewers alcohol was added.

39% polishing ratio, means that only 39% of the rice grain remains after it has been polished before fermentation, this is to remove as much impurity and keep as much of the pure rice starch for fermentation. Ultra premium sakes always have a polishing ratio of under 50%.

This Sake has a beautiful aroma of Nashi pears, which smell like a cross between apple and pear. Goes tremendous with almost any food. 

Store Sake, cool and dim, open within a year.

Opened bottles in the fridge and drink within a week.
