Felix Bigallet, Viriana China - China, Amer, France (40%, 70cl)

Bigallet China-China is a 19th-century French liqueur reborn, blending bitter and sweet orange peels with quinine, gentian, and alpine botanicals in a copper alembic still. The base of sugar-beet alcohol carries these vibrant flavors without distortion, while a touch of pure caramel lends the luminous amber hue that made it a staple of Parisian café culture.

The nose is a citrus grove in bloom, with orange peel and floral spice. On the palate, quinine’s bitterness dances with honeyed Seville orange and a whisper of alpine herbs—complex but never harsh. At 40% ABV, it’s versatile enough for neat sipping over ice (as tradition dictates) or for reinventing classics like the Americano or Bitter Mai Tai.
