Zinacantan Destilado con Pechuga is an artisanal agave spirit produced in San Diego Mesa de San Miguel, located in the Central Valleys region of Oaxaca, Mexico. Crafted by Master Mezcalera Fabiola Monzón, this expression represents a deeply rooted festive tradition. It is produced using 100% wild Agave Potatorum, locally known as Tobalá, which grows at high altitudes and takes up to twelve years to reach maturity.

The production involves a meticulous harvest of the small, flavor-concentrated Tobalá hearts, which are roasted in an underground conical stone pit and crushed using a traditional stone tahona wheel. Following natural fermentation in pine vats with wild yeasts, the liquid undergoes a double distillation in a copper pot still. For this specific Pechuga expression, a skinless turkey breast along with seasonal local fruits, nuts, and spices are suspended inside the top of the still during the final distillation, infusing the vapor with rich complexity.

The profile is defined by a complex nose of roasted agave, ripe orchard fruits, savory smoke, and a subtle hint of poultry broth. On the palate, it displays a velvety and full-bodied texture with distinct notes of baked apple, cinnamon, savory umami richness, and a underlying herbaceous freshness. The structure is remarkably smooth despite the high proof, leading into a long, warming finish characterized by a balance of sweet fruit and a mineral, mineral-forward dryness.

Zinacantan is well regarded for its commitment to traditional production methods under female leadership, showcasing the elegant and softer side of wild Tobalá. The Pechuga variation is traditionally crafted for special occasions and holidays, making it a highly prized bottle for sipping neat among agave connoisseurs.
