Paranubes Aguardiente de Caña is a traditional sugar cane spirit produced in the Sierra Mazateca of Oaxaca using freshly pressed cane juice rather than molasses. Fermented with wild yeasts and distilled in small copper pot stills, it reflects a rural and expressive style closer to agricole rum than industrial sugar spirits. Bottled at 54 percent ABV, it shows vivid cane freshness grassy notes herbal depth and gentle funk, with a dry and energetic structure. Paranubes is prized for its transparency of production and its role in showcasing Mexico’s lesser known cane spirits.
